You will find that all the places take US Dollars and Euro.

We did same last cruise last summer - wonderful. Whilst most places may take dollars and/or euros not all shops and restaurants etc will. Certainly local transport will only use the currency of the particular country. Of course for larger purchases you can always use a credit card. The post office will issue small amounts of currencies with no exchange fees. That's what we did.
